A Quick Lentil Recipe to Nourish, Detox, and Warm You From the Inside Out

This Lentil Soup In A Snap is one of my go-to recipes when I need something warm, nourishing, and easy to make. It’s a perfect winter dish, packed with ingredients that your gut will love and gently supports detoxification. Whether you’re easing out of holiday indulgence or simply craving a reset, this recipe is like a big comforting hug for your body.

Lentil Soup In A Snap

Ingredients:

  • 1 tbsp unrefined coconut oil
  • 1 white onion, chopped
  • 2 garlic cloves
  • 1 carrot, sliced
  • 1 cup of cooked lentils
  • 1 cup of vegetable broth
  • A handful of fresh basil
  • ¼ tsp oregano
  • Juice of ½ lemon
  • Sea salt and pepper to taste
  • Optional: ½ cup of cooked high-quality protein (chicken, turkey, or tofu)

Directions:

  1. SautƩ the onions, garlic, and carrot in coconut oil until the onions are translucent.
  2. Add the rest of the ingredients—except for the basil and lemon—and bring to a boil.
  3. Reduce the heat to simmer, cover, and stir occasionally.
  4. Turn off the heat and mix in the basil and lemon juice just before serving.
  5. Light some candles, take a deep breath, and warm your soul!
