This Lentil Soup In A Snap is one of my go-to recipes when I need something warm, nourishing, and easy to make. It’s a perfect winter dish, packed with ingredients that your gut will love and gently supports detoxification. Whether you’re easing out of holiday indulgence or simply craving a reset, this recipe is like a big comforting hug for your body.
Lentil Soup In A Snap
Ingredients:
- 1 tbsp unrefined coconut oil
- 1 white onion, chopped
- 2 garlic cloves
- 1 carrot, sliced
- 1 cup of cooked lentils
- 1 cup of vegetable broth
- A handful of fresh basil
- ¼ tsp oregano
- Juice of ½ lemon
- Sea salt and pepper to taste
- Optional: ½ cup of cooked high-quality protein (chicken, turkey, or tofu)
Directions:
- Sauté the onions, garlic, and carrot in coconut oil until the onions are translucent.
- Add the rest of the ingredients—except for the basil and lemon—and bring to a boil.
- Reduce the heat to simmer, cover, and stir occasionally.
- Turn off the heat and mix in the basil and lemon juice just before serving.
- Light some candles, take a deep breath, and warm your soul!
