Healthy Blueberry Bacon Waffles

Waffles are divine. They’re best when freshly made – crispy outside with a soft centre, their sweetness offset with a hint of salt. My mouth is watering just thinking of this delectable combination of delicious flavours.

If you’re like me, you’ll love this recipe. It’s a far cry from your usual sugar-laden sweets, and the best thing is that you can whip this up in less than 15 minutes. With 20 grams of protein and 6 grams of fibre, the macros of this dish are perfectly balanced giving you everything you need for a healthy start to the day.

 

 

 

Here are the steps

1. Add 30g sifted coconut flour, 1tsp coconut sugar and ¼ tsp baking powder to a bowl

2. In a separate bowl, add four egg whites, 60ml almond milk and 1tbsp unsweetened applesauce and mix

3. Combine both mixtures and add 1tsp melted coconut oil

4. Heat the waffle maker and add the batter

5. Once browned on the outside and cooked, serve with bacon, blueberries and maple sauce
