These black bean brownies are loaded with polyphenols and probiotics. WHAT ARE POLYPHENOLS?⁠
Polyphenols are beneficial plant compounds that are packed with antioxidants and health-promoting benefits. In this treat, they’re found in the cacao and may support lowering blood pressure. They can also help to think clearly and counteract the effects of sleep deprivation on memory. ⁠

RECIPE⁠
125g black beans drained and rinsed⁠
2 large eggs⁠
1 tsp vanilla extract⁠
20g cacao powder⁠
80g rolled oats⁠
40g dried pitted prunes⁠
90g pitted Medjool dates⁠
1 large banana⁠
120ml plant milk⁠
pinch of sea salt⁠
⁠
Preheat the oven to 180 degrees Celcius.⁠
Mix all ingredients in a food processor and fill into about 8 large cupcake liners.⁠
Sprinkle with crushed walnuts and add a dollop of peanut butter.⁠
Bake for about 12 minutes. Don’t let them get too dry so that they retain their fudginess. ⁠

They taste great when still warm and even better the next day from the fridge.⁠
